Three Months of Cheese (Dec. - Feb.)

Experts in the aging and ripening of cheeses at New York's Artisanal Premium Cheese Center have searched England, France and the United States to bring you classic cheeses of superb quality. Each month, you'll receive three cheeses (more than 1 lb. 12 oz. total weight) along with details about each variety and suggestions for wine pairing. The work of dedicated artisans preserving traditions that would otherwise be lost, the cheeses are produced on a small scale using hands-on methods. The milk comes from the cheesemakers' own herds or from local farms. (Delivery will occur within the periods listed.) A Williams-Sonoma exclusive.

Month One (Dec. 4-22) Colston Bassett Stilton, the classic English blue cheese, is made by Richard Rowlett from cow's milk in Nottinghamshire. The traditional partner with after-dinner port, it has a creamy texture, ample veining and a rich, full flavor. 7.5 oz.; Quicke's Cheddar, a clothbound English farmhouse masterpiece, is crafted by Mrs. Mary Quicke from the milk of cows that graze on her Devon farm. Aged for 18 months, the cheese has a complex, spicy taste and a tight crystalline texture. 15.5 oz.; American Camembert, made by hand in Michigan by Francois Capt, is soft and mild, recalling true Camemberts from Normandy. Creamy and buttery, with a hint of wild mushrooms, it pairs beautifully with Pinot Noir. 8 oz.
