CARRE ST. JOSEPH

The origins of our "square" date back to the 12 century A.D., when the first Pont-L'Eveque was created. Our version is also a washed rind cheese, made from 100% cow's milk delivered fresh from neighboring farms.

Despite its sharp edges, our CARRE has a subtle, savory flavor, a unique perfume and a soft texture that retains its firmness even at room temperature. Light orange patches on the outer white mold indicate ripeness and protect a pale yellow, moist interior.

Master cheesemakers Bernard and Francois Capt of Old Europe Cheese, Inc. use the centuries-old method of crafting artisanal, farm-style cheeses, using methods that they bring from Normandy, France. The unique process involved includes many time-intensive procedures such as:
  • hand cutting and molding
  • hand washing, brushing and turning; and
  • 20 days of special curing
Each cheese is hand made and requires constant attention from the time that the milk is poured until the moment that the cheese is shipped. CARRE ST. JOSEPH is ripened at the plant for 20 to 25 days before shipping.
